Coffee is one of those details people notice straight away. A good cup makes the whole visit feel better. A flat, bitter, forgettable one does the opposite.
That is why we decided not to take the easy route with cheap, off-the-shelf coffee beans. They might look appealing on a spreadsheet, but they come with compromises that show up in the cup: less freshness, less consistency, less character, and often less care behind the product.
Instead, we chose to work with Coffee World, a local coffee roastery based in Milton, Cambridge, which is a mere 30 miles away from where we are based, in Sawtry, Huntingdon. Cheaper beans can seem like the sensible choice at first. They are easy to buy, easy to store, and the upfront cost is lower. For a small business like Matcha and Bean, I'll admit, that can be tempting.
The problem is that coffee is not just another dry ingredient. It changes with age. It reacts to how it has been roasted, packed, stored, ground, and brewed. If the beans are already tired before they reach the grinder, there is only so much a good machine can do.
Off-the-shelf beans are often designed for convenience and shelf life. They may have spent a long time in storage, in transport, or on a supermarket shelf. They might still make coffee, but they often lack the freshness and structure needed for a really good espresso.
That matters because espresso is unforgiving. It uses pressure, a fine grind, and a short extraction time. Any weakness in the bean shows up quickly.
With cheaper beans, we found the risks were clear:
The flavour can be dull
The cup may taste flat, harsh, or one-dimensional.
The roast can be inconsistent
One bag may behave differently from the next, which makes it harder to dial in the grinder.

Cheap beans often leave a rough finish that milk and sugar can only partly hide.
A lower price per bag does not help much if the result is a drink we are less proud of. It can also mean more waste, more time adjusting the grinder, and more inconsistency from cup to cup.
We wanted something much better than “good enough”. We wanted coffee that customers would come back for, time and time again.

Choosing a local roastery gave us something we could not get from anonymous, mass-market bags: a closer connection to the coffee we serve.
Coffee World is based in Milton, which means we are not dealing with a faceless supply chain. We are working with a roaster that is close enough to understand, speak to, and build a proper relationship with.
That makes a difference.
When coffee comes from a local roastery, freshness is easier to protect. Beans do not need to spend as long moving through warehouses and distribution systems before they reach us. The shorter route from roaster to cup gives the coffee a better chance of arriving in good condition.
There is also more accountability. If something changes, we can talk about it. If we need advice, we know where to go. If we want to understand how a particular blend behaves, we are not left guessing from a label.
That kind of support matters when espresso is part of daily service. A coffee machine is not a magic box. It needs the right beans, the right grind, and the right extraction. Having a roastery nearby gives us a better foundation for all of that.
There is also a wider reason. Supporting a local roastery keeps more value close to home. It backs craft, skill, and local employment rather than sending another routine order into a huge supply chain. We like that. More to the point, our customers benefit from it in the cup.
Local does not automatically mean better. The product still has to taste good. In this case, Coffee World gave us both: a local partner and coffee that suited what we wanted to serve.
