What Is Matcha?


Matcha is a finely ground powder made from specially grown and processed green tea leaves. Unlike regular green tea, where leaves are steeped and then discarded, matcha involves consuming the whole leaf in powdered form. This means you get a more concentrated source of nutrients and antioxidants.


The process starts with shading the tea plants before harvest. This shading increases chlorophyll production, giving matcha its signature bright green color and rich umami flavor. After harvesting, the leaves are steamed to stop fermentation, dried, and then ground into a fine powder using stone mills.


The Origin of Perfect Ted Matcha


Perfect Ted matcha comes from two renowned tea-growing regions in Japan: Uji and Kagoshima.


  • Uji is located near Kyoto and is one of Japan’s oldest and most respected tea-producing areas. The region’s climate, soil, and traditional cultivation methods create matcha with a smooth, rich flavor and a delicate sweetness.

  • Kagoshima, on the southern island of Kyushu, benefits from a warmer climate and volcanic soil. This produces matcha with a vibrant color and a slightly stronger, more robust taste.


By sourcing from both regions, Perfect Ted matcha offers a balanced profile that combines the best qualities of each area. This matcha is classified as ceremonial grade, meaning it meets the highest standards for quality and flavor, suitable for traditional Japanese tea ceremonies.


How Matcha Is Grown and Processed


The cultivation of matcha involves careful attention to detail:


  • Shading: About three weeks before harvest, tea plants are covered with shade cloths. This reduces sunlight exposure, slows down growth, and increases chlorophyll and amino acid levels.

  • Harvesting: Only the youngest, most tender leaves are picked by hand to ensure the highest quality.

  • Steaming: Leaves are quickly steamed to preserve their color and prevent oxidation.

  • Drying and Sorting: Leaves are dried and then sorted to remove stems and veins.

  • Grinding: The leaves, now called tencha, are ground slowly with granite stone mills to avoid heat buildup, which can degrade flavor and nutrients.


This traditional process preserves the delicate flavors and nutrients that make ceremonial grade matcha special.

Tips for Enjoying Iced Matcha at Home


If you want to enjoy Perfect Ted matcha beyond our trailer, here are some tips:


This makes a 12oz iced matcha latte:

  • Measure approx. 2 grams of matcha powder per serving.

  • Sieve the matcha into a matcha bowl (chawan), as this prevents lumps!

  • Add 10 / 15ml hot water just below boiling (around 70/75°C) to the matcha bowl and mix into a paste with a bamboo whisk (chasen).

  • Add the remaining hot water and whisk in a zigzag motion until a micro foam has developed on the surface. Initially, start whisking towards the bottom of the bowl, and then gradually work up towards the top of the bowl. Whisk for around one minute. Add any syrups/purees/flavouring of your choice into a glass.

  • Add approx. 120g of ice into the glass.

  • Add approx. 150ml of milk into the glass (oat milk is the natural pairing for matcha, but you can add the milk of your choice).

  • Add the matcha, stir and enjoy!

  • TIP: Store matcha powder in an airtight container, away from light and heat, to preserve freshness.
